Pork Roast the Old-Fashion Way (Cast Iron Dutch Oven). Well it's modern day and I substituted Olive Oil for the lard. LOL. Used fresh thyme, smoked paprika, garlic and herb seasoning for rub then browned onion and garlic first and then browned the roast in the drippings. I used 1 3/4 cups of beef broth and 1/4 cup of red wine. It was outstanding and very very tender and moist.
